If something doesn't taste good, I'm not going to eat it. When I adapt, adjust or create a recipe from scratch I think that taste and enjoyment are as important as the ingredients I choose to put in it.
Many of us try to balance health and healthy eating with the pure enjoyment factor. I believe that people won't eat what I make, no matter how healthy it is or isn't, unless they like the flavor, texture, and appearance. Healthy baking is pointless if it doesn't bring enjoyment when eaten.
This gut-healthy muffin recipe is packed full of fiber and pre-biotic goodness. There's no dairy or animal fat beyond eggs . The muffin gets its moisture from applesauce, carrots and pineapple. It gets flavor from a combination of North American staples—carrots and oats—that blend with Southeast Asia favorites—pineapple, coconut, coriander, and cardamom.
Although I have presented the recipe using raisins and cardamom, swapping other dried fruits like cherries, blueberries, ginger, apple PLUS using cinnamon, nutmeg or other warming spices is super easy. Nuts are a great option as well.

I DO care - although to be honest, I'll eat anything that I like regardless of whether it's good for you or not. This is a bonus to find a recipe that has both!
