I wanted a blend of flours that performs well, tastes great, is flexible as an all-purpose flour, and I know I can be 100% certain is safe for me. So I came up with a flour blend that ticks all of the boxes.

I have found that taking the time to buy, blend and store this custom mix is well worth it for my piece of mind and satisfied palate.

Here's the recipe.

Happy Bendy Baking!

This is an interesting combination; I have most of the ingredients on hand but will have to get the brown rice and millet flours - they're not pantry staples here:) I'm looking forward to trying it - in both traditional and also my new sourdough recipes. I'm wondering if it's a heavier flour (with denser results) given some of the ingredients. Do you use it for certain types of recipes?

Looks great! How long did it take you to get the ratios to your liking?
