Who doesn't like a good oatmeal raisin cookie? First, let me tell you a story.
I was well on my way writing an "everything about gluten-free crackers" blog draft, which you'll soon read, when someone who's had my oatmeal raisin cookies asked me for the recipe. I pointed him to the blog and he said he couldn't find it.
After confiirming it wasn't there, I decided to prioritize this recipe because I think it's a really good, all-round oatmeal raisin recipe. This cookie also lends itself to easy swap-ins for the raisins; think nuts (off-limits for me), coconut, chocolate and white chocolate chips and tons of dried fruit options. The fruit alternatives I've tried are dried blueberries, dried apricot, dried pineapple, dried cherries, white raisins, candied ginger, dried mango, dried apple and candied orange.
The swap-in and spice options are almost endless and change the taste experience without adding too much risk, because the basic recipe is so solid. As is true with most of my recipes, you can easily convert to regular all-purposed flour instead of gluten-free flour.

I've never put dried apricots in oatmeal cookies but I will now. It sounds delicious. Thanks for the new ideas!
I made oatmeal cookies recently (mostly to use an overabundance of raisins.) Thanks for reminding me to think more creatively - that dried apricot and white chip combination is calling my name! Like you, I like mine spicy!
