For any serious baker, whether home-baker, self-taught, professionally-trained, focusing on technique is important. 

Examples of technique include; creaming, folding, liquid incorporation, adding volume and air by whipping, adding air bubbles through heat. 

It's my belief that this is doubly true for alternative ingredient, aka "Bendy" baking. ​Gluten-free flours and non-dairy substitutes can perform differently than their traditional counter-parts. 

Luckily, if we focus attention on what we do, understand our ingredients and use our powers of observation, we improve the quality of outcomes and increase our enjoyment.
